Besides spooning it over a baked potato or making onion dip with it, sour cream serves many purposes in good food! It also works wonders when it comes to baking with it. Most of us are familiar with the "Sour Cream Pound Cake", which is a long-standing favorite. It's the sour cream that gives it a special smoothness that seems to agree with our palates so well. I'd like to pass along the ingredients for another bakery item that is always how to make coffee cake new york great with the breakfast crowd and that's "Sour Cream Coffeecake".
This is an old stand-by recipe and one that is a bit interesting when it comes to preparing it. For one, it calls for butter, so you know without question it'll be great. However, you melt the butter before preparing the cake! I was rather surprised that it would call applesauce cake new york for melted butter, but I followed the directions and it turns out wonderfully well. Also, you place baking soda in the sour cream and this causes the sour cream to "foam", which is what will leaven the coffeecake. Otherwise, you continue to assemble the recipe as you would any cake: the melted butter is creamed with the sugar. The eggs are beaten in one at a time. Vanilla extract is added then alternately, flour is added with the sour cream and baking soda combination, mixing until smooth as each is added.
You also make a cinnamon and sugar mixture, which also contains chopped nuts, and this is layered with the cake batter. Once this is all put together, it's ready for the oven. This bakes at 350 degrees for 40-45 minutes or until it tests done. Let it cool in the pan for a few minutes then unmold it onto a serving platter. Have the coffee or the cold milk ready before you indulge into it!
The original recipe didn't state what size pan to use, but I've baked this in a Bundt pan, as well as a 9x13 inch pan. The 9x13 will bake faster, so check it after 30 minutes have passed. I like the 9x13 version since this makes it easier to transport if you want to take it somewhere.
I gave another coffeecake that is much like this one, except it uses a cake mix. To get the recipe for "Cinnamon-Pecan Coffeecake", follow this link:
